Rossini

Named for the 19th century Italian opera composer Gioacchino Rossini, this is one of the most popular Bellini variants in Venice.
It’s a great idea  to serve it at home for dinner among friends: put strawberries and sugar into a bowl and allow to macerate for 1 hour. After that take a blender and puree. Spoon 2-3 tablespoons of strawberry puree into each glass. Top off with Prosecco. Gently stir and garnish with fresh strawberry if desired.

Mimosa

Simple, fun and perfect for a Sunday brunch.
The classic Mimosa recipe calls for equal parts of Prosecco to freshly squeezed orange juice.Always keep the wine and juice chilled. When you are making a Mimosa always add the sparkling wine first, then top with orange juice. Don’t stir and salute!

Aperol Spritz

The Italian Spritz, also called Veneziano, is commonly served in the northern part of Italy, especially in Venice.
What you’ll need to do to make your own is fill a glass ¼ full with ice cubes, pour in 2 to 3 ounces Prosecco and top with 1 ½ ounces Aperol.Add a splash of soda water or sparkling water.Stir until mixed and enjoy.

Bellini

It is said Cipriani was inspired by one of Bellini’s paintings when it came to find a name to this pink cocktail.
To make your own Bellini mix white peach puree with sugar syrup. Add about 20 ml of peach puree in each glass. Pour Prosecco and stir to mix the peach and Prosecco well.
